cW Recipes: Cruciferous Veggie Bake with Cashew Herb Dressing

Every ingredient in this veggie bake does the body good.

What exactly is a “cancer-fighting” food? Well, it’s any food that promotes healthier overall cell function, which can reduce cancer cell growth. The food we eat breaks down into macronutrients and micronutrients which provide fuel for our cells. While all cells need fuel to function, certain fuels have properties that can help fight cancer.

Every ingredient in this veggie bake does the body good. Fresh, colorful veggies are layered and topped with a dressing that could almost be described as a miracle elixir—healthy fats, complex carbohydrates, and antioxidant-rich spices tout impressive health benefits. A variety of fuel sources is the key to happy cells.

FOR VEGGIE BAKE:

  • 1 cup broccoli florets
  • 1 cup kale leaves, chopped (around 2-by-2 inches wide)
  • 1 cup cauliflower, chopped
  • 1 cup cabbage, chopped
  • 1 cup portabello mushrooms, chopped
  • 1 cup cherry tomatoes, halved
  • olive oil (to drizzle)
  • pinch of salt
  • pine nuts (for topping)

 

FOR CASHEW HERB DRESSING:

  • 2 tablespoons tahini
  • 2 tablespoons olive oil
  • ¼ cup cashews
  • 1 whole avocado, halved, with skin and pit removed
  • 1 clove of garlic
  • ¼ cup basil leaves, chopped
  • 1 teaspoon turmeric
  • 1 teaspoon salt
  • juice of lemons (1 and a half)
  • water for thinning
  • 1/2 teaspoon cayenne pepper (optional)

Directions

  1. Preheat oven to 400°.
  2. Line a baking sheet with olive oil.
  3. In a large bowl, toss all of the vegetables with olive oil and salt, and pour mixture onto baking sheet.
  4. Bake for 45 minutes or to the desired doneness.
  5. Add all of the dressing ingredients to a food processor and blend until smooth. It will be thick once blended, so alternate between 2-parts water and 1-part olive oil until it is a pourable consistency.
  6. Pour the dressing over the baked vegetables.
  7. Top with pine nuts and serve warm or cold.
